Carrot Cake Porridge

Although spring is now here, mornings still have a tendency to be a little on the cooler side. I like experimenting with different flavour combinations to make breakfasts a bit more exciting, and these oats were very delicious and filling. Being a wholegrain, I love the health benefits that oats provide, including gut-loving prebiotic fibre, B vitamins and various minerals including zinc, selenium and magnesium. I hope you enjoy this recipe!

Ingredients (serves 2-3):

  • 1 cup rolled oats

  • 1 cup filtered water

  • 1 cup milk of choice

  • 1 tbsp ground cinnamon

  • Pinch of ground nutmeg

  • 1 carrot, grated

  • 2 tbsp maple syrup

  • 2 tbsp butter

  • Crushed walnuts or pecans to sprinkle on top

Method:

  1. Add the oats and water into a pot and allow to sit for 10 minutes.

  2. Turn the heat to medium and add the remaining ingredients except for the crushed nuts. Stir often and cook for around 10 minutes or until the oats are soft and the porridge has thickened.

  3. If using, serve sprinkled with crushed nuts on top.
