Apple & Blueberry Crumble

I picked up an extra kilo of apples this week with my fruit and veggie box - the apples were quite small, and marked down in price. You don’t have to twist my arm too much to convince me to pick up some extra spray free produce when it’s on special - I will always think of ways to use it up! I decided to stew some of these apples to have on hand in the fridge for us to have with oats or muesli for breakfast or as a snack. I decided to also use some of the apples to make into a fruit crumble for afternoon tea for the kids when they get home from school. The smell of fruit crumble as it bakes, wafting through the house, is quite incredible, isn’t it?

Ingredients (serves 8):

Fruit base:

  • 3-5 apples (depending on size), cored and diced (I leave the skin on for extra fibre)

  • 3/4 cup frozen blueberries

  • 2 heaped tbsp coconut or rapadura sugar

  • Good squeeze fresh lemon juice

Crumble:

  • 100g rolled oats

  • 50g almonds (or pumpkin/sunflower seeds for nut free)

  • 20g desiccated coconut

  • 50g coconut or rapadura sugar, extra

  • 50g flour of choice

  • 100g butter, cubed

  • 2 tsp ground cinnamon

  • 2 tsp vanilla extract

Method:

  1. Preheat oven to 180 degrees C.

  2. Place the apples, blueberries, 2 tbsp sugar and lemon juice into a square baking dish. Toss through together to coat the fruit in sugar and lemon juice.

  3. Into a food processor, add the remaining ingredients and pulse a few times until you reach a crumble consistency. Pour the crumble mixture over the top of the fruit in the baking dish.

  4. Bake for 30-40min or until the fruit is soft and cooked through. Enjoy!
